Tasting Notes

This coffee has notes of chocolate, dried fruit, and graham cracker. Due to the decaffeination process that uses sugarcane, this coffee is pleasantly sweet!

 

About the CoffeeLocated in a biological Conservation Corridor, Valle del Cauca lies between the National Park of Tatama and "serrania de los paraguas". Some years ago, this region was identified by Conservation International as one of the two main conservation corridors in Colombia. Farmers in this region are keenly aware of the importance of the preservation of natural resources, water management and friendly environmental practices.Valle del Cauca Excelso was decaffeinated in Colombia using ethyl acetate - an organic compound derived from sugar cane - to remove 97% of the caffeine from coffee beans. The process tends to leave a pleasantly sugary flavor.Origin ReportWith 16 coffee-producing regions along three mountain ranges and two harvests each year, Colombia is a fresh coffee powerhouse. About the Process

Sugarcane decaf, also known as EA decaf, is a process that involves the fermentation of a sugar-- usually sugarcane, into an alcohol: ethyl acetate. Ethyl acetate is then used to dissolve the caffeine in green coffee beans.
